SIMON DESILES

Simon Desiles, the Chef, is the product of many influences ranging from country cooking of the “Sarthe” to Michelin starred restaurants all over France. His philosophy is; to give pleasure through a job well done. “Cooking is more than recipes” Alain Chapel. L’Aigle d´Or allows Simon to express his vision of a “cuisine française” respecting the traditional skills and techniques, but presented with flair and imagination. A purist concerned with respecting the rules of the art learned in great French houses, where one trait is universal: passion. His influences include:

  • The wellness cuisine by Michel Guerard in the South West, a pioneer in the modern identity of gastronomy.
  • Regis and Jacques Marcon for their proximity to nature in Auvergne.
  • The creativity and rigor of Benoit Vidal in Val d’Isere.
  • Vincent Arnould’s pedagogy and modesty in the Dordogne.

ELEANOR THOMAS

After studying law in England, Eleanor fell in love with the lifestyle “à la francaise” and the beauty of the landscapes. She formalised her passion for pastry and she made it her profession. Curious about everything and naturally welcoming, when arriving at l’Aigle d’Or the front of house becomes her domain within the restaurant, which suits her caring and welcoming nature perfectly.

She looks after diners, advises on wine choices, and watches over the pastry from afar. The garden is her relaxation, the management her structure, and the wine her adventure. A happy hostess.

TOGETHER

Together Eleanor and Simon are proud to demonstrate their personal and professional investment in their first adventure. They have chosen to settle in Touraine, a stone’s throw from Sarthe, the chef’s native region, to benefit from a rich gastronomic history and culture. Together the couple offer an original, responsible and tasteful culinary experience.

Simon recognises all of his training but knows that cooking is a lifelong learning experience. Now it is his turn to pass on the things that he has learnt and would like l’Aigle d’Or to be a place where others can benefit from his knowledge, skills and ideas.
